Made this for dinner tonight. It was easy, really good, and really filling.
Skillet Sausage Pasta
Servings: 4
Ingredients:
1 tablespoon olive oil 1 pound fully cooked smoked sausage in your flavor of choice 1 cup diced onion 2 cloves garlic, minced 2 cups low-sodium chicken broth 1 (14.5 oz) can diced tomatoes 8 ounces (approximately 2-1/2 cups) uncooked, dry penne pasta 1/2 teaspoon crushed red pepper, or to taste 1/2 teaspoon salt and pepper, each 1/2 cup half and half or heavy cream 1 cup Monterey Jack cheese, shredded 1/3 cup thinly sliced green onions
Directions:
Add olive oil to a deep, oven-safe skillet over medium-high heat. Add sausage and onions and cook until lightly browned, about 4 or 5 minutes. Add garlic and cook for a minute or two until fragrant.
Add broth, tomatoes, pasta, crushed red pepper, salt and pepper and stir to combine. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes. Stir in half and half or heavy cream and simmer for another minute or two until warmed through.
Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with green onions. Set your oven to broil and place skillet in oven for just a couple of minutes until cheese is melted and bubbly.

My meatloaf "recipe"
1 pound hamburger Seasoned bread crumbs 1 Egg Garlic Powder Italian seasoning Seasoned Salt (Any other spices you would like)
Mix all ingredients together and form into loaf shape and put in loaf pan. I do everything to taste so I have no measurements. I just kind of dump it together. You want to make sure the the meatloaf it moist but that it has enough breadcrumbs to hold it together.
Glaze: Ketchup Brown Sugar
Again, no measurements. Just use enough ketchup to be able to coat the top of the meatloaf and add enough brown sugar to give it a sweet tangy taste to your liking. Spread glaze on top of the meatloaf and bake at 350 degrees for an hour or so.

Garlic Parmesan Chicken
1/2 cup grated Parmesan cheese 2 TBS Italian Seasoning 1/4 tsp pepper 1/2 tsp garlic powder 1 1/2 lbs boneless skinless chicken breasts
1 egg slightly beaten
Preheat oven to 400. Combine cheese and seasonings. Dip chicken in egg then coat with the cheese seasoning mix. Place in a shallow baking dish. Bake for 20-25 minutes or until cooked through.
I made this for the first time this week. Hubby and I really liked it.

Vegetable Gratin
This is Ron's recipe. Very delicious. You can substitute whatever vegetable you want. Potatoes work too.
Sauce:
6 Tablespoons Butter
6 Tablespoons Flour
2 Cups Milk
1/2 Cup Dry White Wine
8 oz Cheddar/or your favorite cheese, grated
1/2 Cup Grated Parmesan
1/4 Teaspoon Nutmeg
Salt/Pepper/Herbs of Your Choice to Taste
Make roux by combining butter and flour over medium to medium low heat. Cook roux for a minute or two, stirring constantly. Start adding cheese, then milk a little at a time, keep stirring. Do this until you have a white sauce. The sauce needs to be cooked until bubbling hot. Use the wine and parmesan cheese for flavor, as well as making the sauce the right consistency. It should pour like a pancake batter. Add nutmeg, salt, pepper, and herbs. Stir. Do some serious tasting, and make it to your taste buds.
Steam medium size cauliflower, so it is slightly soft. Use medium size pan (9 by 11). Butter the pan. Put in 1/4 of sauce. Place cooked cauliflower in pan. Cover with remaining sauce. Cover mixture with bread crumbs and parmesan cheese.
Bake uncovered in 350 degree for 40 minutes. Mixture should be bubbling.

Made this for dinner tonight. So good!! I skipped the wine and just used chicken stock with a little bit of lemon juice and added onions into the mix. 2 tablespoons (1/4 stick) butter 2 tablespoons olive oil 2 red bell peppers, thinly sliced 2 large garlic cloves, chopped 4 skinless boneless chicken breast halves All purpose flour 1 cup canned low-salt chicken broth 1/4 cup dry white wine 2 tablespoons chopped fresh parsley Melt butter with oil in heavy large skillet over medium-high heat. Add peppers and garlic and sauté until pepper are tender, about 10 minutes. Using slotted spoon, transfer peppers to bowl. Season chicken with salt and pepper. Sprinkle flour over chicken to coat evenly. Add chicken to skillet and sauté until light brown, about 3 minutes per side. Transfer chicken to plate. Return peppers to skillet; add broth and wine. Increase heat to high. Boil until liquid thickens to sauce consistency, scraping up browned bits, about 5 minutes. Return chicken and any juices to skillet. Cook until chicken is cooked through, about 3 minutes. Season with salt and pepper. Transfer chicken and peppers to platter. Sprinkle with parsley.

I rarely cook...I mean close to never...put it this way, my oven has been broken since last fall and I have been in no rush to get a new one. But when my microwave broke I was out the very same day buying a replacement. Anyway...I love recipes and collecting them...and pinning them...it makes me feel like I cooked without the mess or calories. LOL Do any of you have pin boards for recipes? I'd love to find some new ones to follow. Here's mine if anyone is interested. Food Pinterest board

Seven Layer Dip
2 avocados - peeled, pitted and diced 1 1/2 tablespoons fresh lime juice 1/4 cup chopped fresh cilantro 1/4 cup salsa garlic salt to taste ground black pepper to taste 1(8oz) container sour cream 1 (1oz) package taco seasoning mix 4 roma tomatoes diced 1 bunch green onions, finely chopped 1 (16oz) can refried beans 2 cups shredded cheese 1 (2.25oz) can black olives drained and finely chopped
In medium bowl mash avocados, mix in lime juice, cilantro, salsa, garlic salt and pepper In small bowl blend sour cream and taco seasoning In a 9X13 dish or large serving platter spread the refried beans. Top with sour cream mixture. Spread on the guacamole. Top with tomatoes, green onions, cheese and black olives.

If you are looking for soup on a cold day this one is quick, easy and pretty economical.
5 Can Soup
1 can of corn
1 can diced tomatoes
1 can black beans - rinsed and drained
1 can of mixed vegetables
1 can of Progresso minestrone soup
Mix together and heat.
I think it's a weight watchers recipe. You could add spices if you choose.
