I'm a little late to the discussion, but I've been busy with a trial at work and couldn't chime in .... For me what used to be different was that there was a sense of excitement about the show. Maybe I didn't like all of the characters (*cough*Sami and Marlena!*cough*), but the show itself had so many other exciting stories that it didn't matter if I disliked one part. Or maybe you didn't like a character, but they still had an interesting storyline.
I remember racing home from school to watch the show, and being devastated on days when the VCR would mess up or the power went out and it didn't record. And before you could set a VCR, I'd only get to watch during the summers or holidays. But even then there was a sense of excitement and anticipation. That is what is different, IMO. The show isn't exciting. The storylines are dull. All of them. I can go for days without watching. And, the thing is, I can go for days without watching and not miss a single thing. It'll still be the same day and we will have repeated scenes and conversations over and over, with pointless flashbacks. I swear one year they spent ALL summer on a plane to Paris to save Hope (and I think Stefano was trapped in the castle with her?), but every moment of that weeks-long flight was exciting!
For me, that's what is different ... the show used to be exciting and enjoyable to watch every single day, even if you didn't love every character or story.

These are my recollections of the 70s and 80s.
There used to be sage advisors who would help the younger characters with their problems.
When people wanted to talk privately they went to their homes or offices, seldom to a public park bench.
Stories were about real-life, current issues, stuff the other soaps were afraid to write about.
There were regular doses of "comic relief" to balance out the drama and despair.
There were solid couples. Sure they'd have their spats but they would always work it out. They didn't instantly give up on each other and end up in someone else's bed that same night and then make up with each other the next day.
Production-wise The actors too often seem rushed and unprepared in the scenes. For the young ones I figure it's mostly because they are new. For the veterans I will blame the film-it-once-and-move-on production schedule.

These three things are what I miss most and what I try really hard to put in my fanfiction (though I'm not great at comic relief). The way I see it, the show is called "Days of Our Lives" because it's supposed to be about everything that happens in people's lives -- the good AND the bad, not just constant breakups, violence and misery.

Nowadays it seems like every character has evil in them instead of the evil being left to the true villains.
Also, there used to be a better balance of cast. It used to be more of an ensemble with lots of characters interacting and stories intersecting, rather than a focus on one diva, like Marlena, Sami, and Hope. So much focus on one individual makes it hard to enjoy the show if you don't like that character or the character's story.
