Marinated Onions
3/4 c. water 3/4 c vinegar 1 c sugar 1 tsp salt
Heat together, to boil. pour over sliced white onions. two onions.
-soak overnite
-drain all water off well, and add mayonnaise. can't remember how much mayonnaise. enough to coat all of the onions well. it might be quarter or half cup. doesn't really matter how much.

I don't like onions either is the thing. my mother in law introduced me to this and they cannot believe how much I love it. I am the pickiest eater in the world and never try new things. I am so glad I tried those onions LOL

Yay! Let me know how it goes. I just love them. FYI,, they came out great... Yesterday I tried them on my egg salad sandwich & it was yummy... So easy to make also.

They are so good. Glad you liked them. I made some last week and had them on my egg salad sandwich too. And my turkey and stuffing sandwich. And my chicken salad sandwich. I eat a lot of sandwiches at work haha

I made really easy and simple swedish meatballs for dinner the other night in the crock pot. I just used a package of frozen meatballs, a couple cans of cream of mushroom soup and probably around 4-6oz of sour cream and cooked on low for 6 hours or so. It was sooooo yummy!!! I made mashed potatoes to go with it but it would be really good with noodles too!

I made a kind of chicken pot pie in the crock pot this weekend too except I didn't make the biscuit topping in the crock pot. I figured it would get soggy in there. But I just cut up chicken and added cream of chicken soup a little milk seasonings for taste (thyme, garlic, onion powder, salt) and then whatever frozen veggies you like. If I did it again I would wait until the last couple hours to add the veggies in so they don't get mushy. Then I just made biscuits in the oven and served the chicken mixture on top.

This is the best buttercream icing ever, all because of the cream and salted butter.
1 cup of salted butter 3 tsps of vanilla 4 cups of icing sugar 4-5 tbsps of coffee cream (18% or higher.)
Make sure you use the salted butter. Makes a HUGE difference.
Whip the butter with a mixer. Add the icing sugar. Make sure it's fresh icing sugar. believe it or not, icing sugar goes stale rather quickly. Add in the coffee cream. I used 4 tbsps but the more you use, the whippier the icing. Stiffer=less cream. Keep mixing until thoroughly mixed and until it looks fluffy! Enjoy. It's amazing!
I will add the from scratch vanilla cupcake recipe when I get home. I don't remember all the details.
