So many tasty desserts so little time.
Pasta Salad
8 oz curly pasta, cooked and drained 2 diced tomatoes 2 stalks celery, diced 1 green pepper, diced 1/2 onion, diced 1/2 cucumber, diced
sauce 1/2 cup vinegar 1/2 cup oil 3/4 cup ketchup 1 cup sugar
Combine sauce ingredients. Add other ingredients. Chill
I often double the pasta and veggies but not the sauce. There's still plenty of sauce to cover all of it. I also like to use the colored pasta.

I have never used ketchup in pasta salad. We use Italian dressing and Supreme Salad seasoning on ours.

Morning Coffee Blueberry Muffins
Ingredients:
1 egg, well beaten 1/2 cup sugar 1/2 cup vegetable oil (I used canola oil.) 3/4 cup milk (I said 2/3 cup in the video, but 3/4 cup will be better.) 1/2 teaspoon ground cinnamon 1 teaspoon vanilla 2 cups self-rising flour 1 cup fresh blueberries, washed and dried with paper towels cooking oil spray
Mix all ingredients, except blueberries. Gently fold in 1 cup fresh blueberries. Spoon into muffin tins that have been sprayed with cooking oil, until 3/4-full. Bake at 400 degrees for 18 to 20 minutes. When done, a toothpick inserted into the center will come out clean. Note: If you prefer not to spray the muffin tins, place a paper baking cup liner for each muffin. These are really great muffins--enjoyable for everyday, but elegant enough for company!
Note: If you don't want to spray your tins with cooking oil you can grease with butter or use muffin liners.

Ziploc Omelette
Crack two eggs into a quart size ziploc bag and shake it up. Add ingredients such as cheese, ham, onion, peppers, tomatoes, salsa, hashbrowns etc. to the bag and shake. Make sure to get the air out of the bag and zip it shut. Place bags into rolling boiling water for exactly 13 minutes. You can cook several bags in a large pot of water.
